I needed this to not only be organized and frugal, but to be a bit more creative with our usual fare. Thank you. Cover with cornbread batter we use Jiffy and bake until the cornbread is cooked. A favourite of ours is to use up mashed potatoes. Add grated cheese, left over chicken, ham or bacon and vegetables and make into croquettes coated in flour, egg and bread crumbs.

Cold mash forms into shapes, croquettes or small balls, much easier than warm. A great way to use leftovers or make a meal from scraps in the fridge.

They can be served with sweet chilli dip or a flacoured mayonnaise or with a tomato sauce. Another favorite of mine is basic potato soup.

Similar to the tortilla pizza is a Mexican pizza. Spread canned retried beans on a tortilla, top with salsa and cheddar or taco blend cheese. Bake until golden.
